Rocket, Pear & Fennel Salad with Parmesan Lemon VINAIGRETTE

2 cups of rocket

1 pear (sliced thin)

1/2 red onion (sliced thin)

1/2 large avocado (sliced thin)

1/4 fennel (sliced thin)

Fennel fronds


3 tablespoons of grated Parmesan

Juice of half a lemon

Olive oil (double to lemon qty)


Combine the ingredients and shake until emulsified


2 pieces of pork scotch fillet

Rocket Pear & Fennel Salad


  1. All all the salad ingredients in a bowl. Pour over the dressing (to suit your taste).

  2. Oil and season 2 pieces pork scotch fillet steaks. Fry until cooked and allow to rest.

    Slice and serve the pork on top of the salad with a sprinkle of fennel fronds and pour over the dressing. Mix and enjoy.
