1 kg chicken drummets/wingets
2 stalks of shallots for garnishing
2 tablespoons brown sugar
1 tablespoon olive oil
1 heaped teaspoon freshly grated ginger
Zest of a lime
Juice of a lime
2 cloves crushed garlic
2 tablespoons light soy
1/2 tablespoon of fish sauce or Worcestershire sauce
1/2 teaspoon dried chilli
Season the wings with salt and pepper.
Combine all the marinade ingredients and stir well.
Pour the marinade over the chicken and allow it to marinate for 1 hour or over night (if possible).
Cook these on the outdoor grill for 15-20 mins (baste with the marinade when grilling) or cook them in the oven.
If cooking these in the oven preheat the oven to 200 degrees for 20 mins and turn the grill function on for the last 10 minutes, turning, so they become sticky and golden on both sides.
