Easy Egg Pea & Shallot Fried Rice

Ingredients

1.25 cups of white rice

2.5 cups of water or stock/bone broth

1/2 cup frozen peas

4 eggs

Salt /pepper

4 shallots

3 tablespoons soy sauce/tamari

1 tablespoon olive oil

Chilli oil to serve

Egg Pea & Shallot Fried Rice

Method

  1. Rinse the rice until the water runs clear.
  2. Add the rice to a saucepan with the water, season with salt and bring to the boil.
  3. Lower it to a simmer with lid on and cook for 13 minutes.
  4. 5 minutes before the rice is cooked, add the peas and mix through.
  5. Allow the rice to sit for 10 minutes.
  6. Beat the eggs, season with salt and pepper
  7. Slice the shallots
  8. Add a tablespoon of oil to a pan and sauté the shallots for a minute. Add in the egg, and once the edges start to cook, gently fold into the centre. Continue, until the egg is cooked.
  9. Remove from the pan and add in the cooked rice. Allow to cook for a few minutes, return the egg and stir through the soy/tamari.
  10. Sprinkle with shallots and serve.

Add you favourite sliced protein, bean sprouts or grated carrots and zucchini to bulk up this dish.
