Vegetable Potato Bake

Ingredients

3 large potatoes

1 small head of broccoli

1/4 head of cauliflower

5 rashes bacon

1/4 leek

5 eggs

2 tablespoons cream

4 tablespoons Parmesan cheese

1/4 cup grated cheese

1 tablespoon butter

1 tablespoon oil

Salt/pepper

Vegetable Potato Bake

Method

  1. Slice the potatoes into 3mm width pieces
  2. Cut the broccoli and cauliflower pieces into florets
  3. Roughly chop the bacon into small pieces bacon
  4. Slice the leek into 2mm pieces
  5. Add potatoes to a pot covered in water and bring to a boil until they can be easily pierced ( but not falling apart)
  6. Add broccoli and cauliflower to another pot cover them halfway with water and steam with the lid on until cooked (don’t overcook them)
  7. Heat pan with oil and sautéed the leek on medium heat, adding the bacon and cooking for another few minutes.
  8. Preheat oven to 180 deg.
  9. Grease a square or rectangular baking tin.
  10. Add the cooked broccoli and cauliflower. Laying pieces of potato throughout the dish. Season the vegetables with salt & pepper
  11. Spoon in the bacon and leek mixtures.
  12. Mix the eggs in a bowl, adding the cream and Parmesan cheese.
  13. Pour over the vegetable and bacon mixture, evenly distributing.
  14. Sprinkle over the grated cheese and finish with small knobs of butter randomly placed over the top.
  15. Bake for 15-20 minutes or until top is golden.
