Ingredients
2 small Lebanese cucumbers
1 avocado
1/2 punnet cherry/grape tomatoes (1 medium tomato)
1/4 red onion
1/2 stick of celery
3-4 fresh basil leaves
2 tablespoons of extra virgin olive oil
185g tin of tuna
Juice of a large lemon
Salt to taste
Crackers to serve

Method
Dice the cucumbers, tomatoes, celery, and onion.
Roughly chop the basil leaves.
Mash the avocado in a bowl, add tuna and the remaining salad ingredients.
Season well with salt and add the olive oil and squeeze the lemon juice. Mix everything until combined.
