Ingredients

2 small Lebanese cucumbers

1 avocado

1/2 punnet cherry/grape tomatoes (1 medium tomato)

1/4 red onion

1/2 stick of celery

3-4 fresh basil leaves

2 tablespoons of extra virgin olive oil

 185g tin of tuna

Juice of a large lemon

Salt to taste

Crackers to serve

Tuna and Avocado Salad

Method

  1. Dice the cucumbers, tomatoes, celery, and onion. 

  2. Roughly chop the basil leaves.

  3. Mash the avocado in a bowl, add tuna and the remaining salad ingredients.

  4. Season well with salt and add the olive oil and squeeze the lemon juice. Mix everything until combined.
