Mango Cucumber and Avocado Salad

1 large avocado 

1 large mango (2 cheeks)  

2 medium cucumbers

2 tablespoons of chopped coriander

2 tablespoons of fresh chopped mint leaves

Juice of a large lime

1/4 of a red onion
1 green chilli

1 teaspoon of salt 

1/3 cup of olive oil or double the amount of lime juice

  1. Dice the mango cheeks and add to a bowl 
  2. Dice the onion, chilli, cucumbers and avocado and add to the bowl]
  3. Add the chopped herbs
  4. To a jar, add the olive oil, salt, and lime juice. Combine well and pour over the salad. Add additional lime juice or olive oil if needed.
  5. Gently mix to combine and serve with your favourite fish or chicken dish
