Don’t you hate throwing away herbs after a few days because they don’t last?

Basil is a fragile herb that does not like the cold. The leaves will turn brown, so avoid storing fresh basil in the fridge. . If you are want to garnish, add to a salad, make some pesto or top on bruschetta, you need to know how to store it properly.

Place it in a glass of water, loosely cover the leaves with a plastic bag. Leave it on the bench. Change the water every few days.
.
If you can’t get through a whole bunch, freeze the remaining leaves and add them to a sauce as needed.

This dish takes me back to Italy. It’s budget friendly, fresh and ready in 20 minutes using items from our weekly fruit & veg boxa.

Baby Tomato, Garlic & Basil Sauce
Prep 3 minutes | Cooking 15 minutes
Ingredients
2 punnets of cherry or grape snacking tomatoes (halved)
350g spaghetti
3-4 tablespoons olive oil
2 cloves of garlic (finely chopped)
1/4 of an onion (finely diced)
4-5 basil leaves
1/3 cup water
Salt to taste

Method
1. Bring a large pot of salted water to the boil and cook the pasta for 9 minutes or until Al dente.
2. Heat a large frypan on medium heat. Add the olive oil, followed with the sliced garlic. Add a pinch of salt.
3. Sauté the garlic for a few minutes until aromatic
4. Lower heat, add the tomatoes and a good pinch of salt. Allow these to cook for 10 minutes stirring and add the water.
5. Once the tomatoes start to break down and create a sauce, stir in the basil leaves.
6. Add cooked pasta directly into the sauce along with 1/2 cup of the pasta water. Mix to combine and serve with freshly torn basil leaves.
