As a wholesale fruit & veg supplier, we buy in bulk to prepare our customer’s with weekly fruit & veg Boxas.

If you hate waste especially with life being so expensive, here are some cost effective ways to cook or use up eggplant (or try cooking it if you haven’t). 

1. Boil them and blitz them until mashed. Store in zip lock to freeze and add to mince to make Eggplant & Beef Rissoles.
2. Dice them and lay them on a baking tray. Freeze until frozen then bag them to freeze and use when needed. 
3. Dice them and cook a Pasta ALLA Norma tomato & eggplant pasta sauce 
4. Slice them and grill them with olive oil. Brush them with a marinade of extra virgin olive oil, balsamic vinegar, parsley and garlic. Serve with an antipasto board
5. Slice them and grill them and use them to make an eggplant parmigiana or to replace pasta sheets in a lasagna.

SAVE & SHARE this deliciousness. 
Buying in season means you will be EATING THE BEST tasting version of that fruit or veg. In season means there is an abundance of that item (if the growing conditions/weather are favourable), so you’ll SAVE money. These super sweet, vine ripened tomatoes (sweeten by the sun) are available in this week’s boxa. See our recipe below:

Roasted Tomato Spinach Ricotta Tart
Ingredients 
You will need; Tray approx 38cm x 26cm 
1 cup of cooked spinach (silverbeet or baby spinach) 
2 shallots 
280g of fresh ricotta cheese
2 punnets of grape or cherry tomatoes 
Salt
Olive oil 
2 sheets of puff pastry 
10 fresh basil leaves to garnish 

Method
1. Remove the pastry from the freezer and thaw. 
2. Boil a large pot of water and cook the spinach until soft. Strain and run it under cold water to cool. Squeeze out the excess moisture and finely chop the spinach 
3. Preheat the oven to 200 degrees Celsius 
4. Finely chop the shallots
5. Combine the ricotta, shallots and spinach. Season well with salt and pepper. 
6. Line the tray with baking paper. Press the ends of two pastry sheets together to create one long sheet. The pastry will overlap over the sides. Fold and press the edges of the pastry in to create a boarder. 
7. Spread a thin layer of the ricotta and spinach mix over the entire layer of pastry. 
8. Evenly lay the tomatoes over the top of the ricotta/spinach mix. Lightly drizzle olive oil on top of the tomatoes.
9. Bake for 25-30 minutes or until the pastry is crispy and golden. 
10. Sprinkle sea salt over the tomatoes and top with the basil leaves.
11. Serve with your favourite protein or with a big mixed salad.

Sick of your fruit spoiling within a few days in the heat of summer? It could be the way you are storing it or heavy rains in growing areas can also be an issue. 
In Autumn, winter and spring, storing certain fruits in the fruit bowl on the bench is no problem. HOWEVER, in Summer when it tends to be humid, HOT and rainy (like we are experiencing this past summer), this could affect the quality and shelf life of many fruits. Fruit doesn’t fare well changing temps, especially if moved in and out of cold storage and then into muggy, hot environments. 
Here is a guide on how to store your fruit (if you prefer softer fruit, you do you, and leave your stone fruit on the bench for a few days then refrigerate)
.
SUMMER FRUIT STORAGE
1. On bench until ripen (then move to the fridge) include:
Avocados, custard apple, mangoes, kiwis, pears, papaw, papaya, rockmelon

2. Fruit bowl friendly: bananas, figs, passionfruit, pomegranate, citrus (lemons/limes/oranges), nashi pears, pineapple, tomatoes
.
3. Fruits to be stored in the fridge: apples, apricots, cut melons, cherries, all berries, grapes, lychees, nectarines, plums, peaches, prickly pears, rhubarb 

Fruit is best served at room temperature. Remove from the fridge 30 minutes before eating.

Want a gutsy salad that’s both filling and delicious (BONUS simple and budget friendly to make!). Grab all your fresh ingredients in your Boxa order. Try a TUNA NICOISE SALAD.

Tuna Nicoise Salad
Feeds 1-2 people | Prep 5 minutes | Cooking 20 minutes
Ingredients 
1 small cucumber (cut into half moons)
6-8 cherry tomatoes (halved)
1/4 of a red onion (diced)
95g of quality tin tuna
1-2 soft boiled eggs 
7 pitted olives
250g beans
4 -5 baby washed chat potatoes (quartered)
1 heaped tablespoon of chopped parsley 
Dressing 
1/3 cup of olive oil
1 teaspoon of red wine vinegar
1:2 juice of a lemon
1/4 teaspoon of Dijon mustard 
Salt & pepper 

Method
1. Wash and cut the potatoes into quarters.
2. Cut the tomatoes, cucumbers and set aside. Dice the onion and finely chop the parsley. 
3. Add the potatoes to a pot of salted water covered and cook until easily pierced with a fork (approximately 20 minutes) 
4. Top and tail the beans. Add the beans to the saucepan with the potatoes 
5. Boil the eggs (check time for soft boiled). Place in a bath of cold water. Peel the egg when cooled. 
6. Combine the olive oil, lemon juice, vinegar and mustard. Whisk until combined. 
7. To a large bowl add all the ingredients. Top with the tuna and egg. Cut the egg in half. 
8. Pour over the dressing and season the dish  well with salt and pepper.
