3 large lebanese cucumbers
1 punnet of cherry tomatoes (or 2 medium tomatoes)
1/2 a red onion
4-5 basil leaves
1 tablespoon of dried oregano
1/4 cup of extra virgin olive oil
- Dice the cucumbers, halve the cherry tomatoes, finely chop the red onion and tear the basil leaves
- Add all the ingredients to a bowl. Season well with salt and add the extra virgin olive oil.
- Mix to combine
- Add a splash of red wine vinegar (optional) and add crumbled Greek Feta cheese.
